Ode and Sculptor are IMO different price brackets and while they are both flagship-level for their price range one is clearly better than the other (Sculptor > Ode). The Ode is a great grinder for it's bracket and you can regularly find it for <300 but its not going to make as good a cup as the Sculptor if you are price indifferent between the two. BTW i think the ssp upgrade for the Ode is not worth it as the stock gen 2 burrs are very competitive.
r/pourover • Help Me Pick a Grinder ->On my bar currently is a Fellow Ode, Baratza Vario, and a Timemore 064s. Had SSP cast in the 064 but probably swapping them to the Ode now. All that to say, I could have just one of any of these and be perfectly happy. Timemore is probably my favorite as far as quality and workflow, plus it can genuinely pull double duty. Ode is great but obviously you're not getting espresso there. Vario is an old design with clunky workflow but the burrs are great-in fact, the Mahlkonig X54 is essentially just an updated Vario. All these are great grinders.

Give a shot to the Comandante C40 + Red Clix-each click is like 15 µm and I can grind down to ~120 µm, awesome for Turkish. Too much arm work? The Timemore Sculptor 064 S with the ultra burrs does around 170 µm electricly. I run both with my SAKI electric cezve, cup comes super clean. Good luck!

r/espresso • What's the quietest, best grinder for less than [$500] ->I have a (kinda old) Baratza Virtuoso, Ode Gen2 and Timemore 064S. You can't grind for espresso with the Ode. The 064S is just a bit fiddly for espresso because the available range is compressed/coarse -- but I use mine every day. My Baratza experience is "emergency use only" but a friend is quite happy with the ESP (filter/drip).

There are little things like the hopper being too shallow, surprise beans, totally random fines ejection, completely borked grind indicator and larger things like cleaning is a pain, shifting from coarse (Aeropress) to fine (espresso) can cause a bad shot and annoyance setting the zero point prompted someone to shorten the locator pin.

I own a niche and a timore sculptor 64s. The sculptor costs less tastes better for espresso and can do pour over.

You will get the best grinder around for around 2k shipping + duty included Under 1k, you could upgrade to the 078, but that's not worth the hassle of resselling + buying again. And you get the same grinder quality, just bigger. So at your place I would keep the 064 and get new burrs if you want to experiment around and unlock "new" (more different) highs.

r/espresso • What grinder do you use, why, and how much did it cost? ->DF 64 Gen2, Timemore sculptor series or niche series are the best grinders in that budget, if you consider taste, UX, and single dose performance - with one caveat, the current sculptor dosing cup is not the best, but a V2 is in the works DF 64 Gen2 is a bit louder Niche is slow at grinding, but imo no concern for home use at all Eureka is solid but a bit cheaper in the build quality, the single Dosing is also a bit worse. More retention (3g vs 0-1g) and hard to hit the exact grind setting again if you switch between beans (very small adjustment knob). But not a bad grinder at all, the others are just a little bit better.

The cleaning diffiuclty is real, but the grinder has virtually zero space in the grind chamber for retention, and the rotary knocker makes short work of any grinds stuck in the exit chute, so cleaning is seldom needed. For hand grinders it has to be zp6 or pietro I would imagine. Pietro would be out of the budget range but either could be found used also.
r/pourover • View on Reddit →I suspect changing burrs is really an endgame level practice, for people with a super refined palette (or people who pretend to have one) You'd be installing new burrs, dialing in your beans again and comparing the flavor profile to your previous burrs in that regard. I doubt most people would notice a difference unless it's a side by side comparison! And there would still be so many variables, that who's to say the change in taste is due to the burrs! The espresso community has a tendency to go crazy for higher end gear, so my advice is to get the cheapest possible grinder that does the things that matter to you. IMO zero retention, easy to dial in, flexibility and noise level are probably more important factors than the ability to change burrs easily and often. The Timemore Sculptor 64s is an endgame level device imo. *Disclosure: I'm just a beginner myself and recently got the Timemore 78s and couldn't be happier. I'm getting into pour over and it's great being able to switch between settings / brew methods easily without having to worry much about retention.*

But my understanding is that both DF64 and 064s will do traditional espresso as well as any other grinder in the $400 price range. With either grinder you have the option of swapping the burrs to Mazzer 233M which are intended for trad espresso. If you go upscale to a Niche Zero or MC6, those will be better for trad espresso.

I know it has its quirks but I wanted something with low retention and the flavor profiles of flat burrs. I figure anything is better than my Breville Smart Grinder Pro at this point. I don't know how long the sale will last - it seems alternate between sale and full price a couple of times per week. 064s uses similar burrs to DF64, but has better build quality and alignment. It's good for all roast levels and all brew methods. If you need to stick to your budget, go for DF64.

I noticed when hand grinding that the speed in which I ground the beans would have a major impact on my shot. The 064s has variable RPM so you can also play around with that if it's been an issue for you.

I started with the SK40, tried to upgrade to the 064S and lowkey hated it, and eventually landed on the Casa. The others were all used from other setups (K2 is my dad's grinder, P64 and Zero are a couple friends). The only thing I would consider over the Casa would be the new CF64V with a nice set of burrs, but even then I think the workflow and minor details of the Casa win out.

Ode 2, the electrical Timemore, ZP6, etc are not good, they're light roast dedicated and they excel at that. That being said, why do you want anything other than your Encore for dark roast? You're not getting good results? The Encore is excellent for your needs, the more expensive ones are dedicated for light roasts and for one, they will result in a bad tasting dark roast, and second, they will get issues line clogging and require high maintenance with dark roast beans. The only thing I would get to complement the Encore would be a manual grinder for portability and variety, you would do good with a 1Zpresso J Ultra or Timemore C3

Low end of Ode Gen 2 is around 250-300 microns and 078 is 370. The 078S and 064S can both grind finder and do True espresso. But from everything I gather, those birds don't produce as good of a pour over cup. I had actually ordered the 078S first because I wanted to future proof it if I ever got into espresso, but ended up returning it without opening the box because I got a lot of feedback that it wasn't as good for pour over. For what you're looking for, Ode Gen 2 will give you most bang for your buck and pretty great price-quality ratio. The 078 is incredible and a noticeable improvement over the the Ode Gen 2, but it is basically twice the price - and the cups aren't twice as good. Still worth it in my opinion.

Pulled the trigger on the Timemore 064S today. Black Friday pushed me over the edge on it. Every grinder out there has its quirks so I figured I just had to make a decision and live with it. I think the 064S will be great. Didn't go 078S because of all the feedback from others about seasoning and inconsistencies with their shots. Hope it works out! Excited to get it.

The Timemore Sculptor 64s might be a better choice than the Fellow Ode 2 or Opus. It's got excellent reviews and costs about the same as the Ode 2. It's rated for everything from Espresso to Cold Brew. The burrs are 64mm so you can find replacements easily or upgrade to SSP burrs. There's also the Sculptor 64, which will grind for everything except espresso. The Sculptor's footprint and design is about the same as the Ode. The ESP pro and Sculptor are probably the best of the lot.

I've had a lot of grinders over the years, Rancilio Rocky, a commercial one from Spain, my previous was (is, I still have it) a Baratza Sette 270. The Timemore was an obvious step up from it, could really taste it in the cup with better shots - improved flavour and mouth feel. Can recommend.

I had a PCB go up on me recently and Timemore sent me a replacement. The replacement took a couple of "back & forth's" and the first replacement they sent was the wrong PCB so there can be some communication issues with these folks. All in all I still like my 064s. No regrets. I have a Niche Zero also which I like too.

The latest 1ZPresso espresso grinder is the J-Ultra, but the JX-Pro is very close, and I don't think it's worth an upgrade. If you insist on spending more money, check out the Pietro hand grinder, or Weber HG-2. For electric, Timemore 064s would be a good option. It has virtually zero retention. There isn't any extra room in the burr chamber for retained grinds to stick, and the knocker gets out any that were stuck in the exit chute.

With grinders, riddle me this: Do you want to single dose or do you want your dosing to be done by your grinder? If you want to single dose, get the sculptor. If you want your grinder to dose for yourself, get Eureka, preferably one of the bigger ones. Or, if you want the option to hand grind while also not needing to hand grind, Goat Story makes hand grinder with motorized stand.
r/espresso • View on Reddit →About 0.1-0.2 grams of retention is what I'm getting with a 064s too, and at least some of that just gets stuck to a dosing cup and to inner walls of the grinder nozzle, and is easily removed by the blower they included with the unit. I don't think that that stuff exchanges though, as after going from a pourover grind to an espresso setting, I get the exact extraction time/yield both on the first shot, and on consecutive ones.

I'm not in love with the wooden block for the catch cup to sit on, it's weird that they didn't stick with the tried and true forks, but it's undeniably a lot closer to the sleek elegance of the lagom P64. The other 64mm flat option but in a different form factor would be the timemore sculptor 064S. Quite a good looking machine imo, by all accounts very good, although a bit more of a pain than most to gain access to the burr chamber.
